This is a very easy salad, great with leftover rice (make lots the next time you cook it and portion into 1- and 2-cup containers to freeze for quick meals and salads). Don’t have apricots? Try cranberries. Don’t like orange? Use grapefruit. Zesty hints of acid, perfect for warming salad.
