    A super easy, quick and light cupcake. Serves 12, or makes one 9″ round layer cake. 1/2 cup + 2 tbsp milk (preferably not skim) 1 tbsp white vinegar 1 1/4 cup all-purpose flour 1 1/4 tsp baking powder 1 pinch salt 6 tbsp butter, softened 3/4 cup sugar 1 egg 1 tsp pure vanilla extract Preheat oven to 350 degrees.
